Kaiser beer on tap: the beer specialities from Kaltenhausen
By Bräustübl Kaltenhausen

Beer has been brewed in Kaltenhausen since 1475, making it the oldest brewing site in the province of Salzburg. Today the Bräustübl serves the Kaiser specialities from Kaltenhausen, freshly tapped and naturally chilled. Here you will find out which beers we serve, how they taste and which one goes best with your dish.
Naturally chilled in the rock cellar
What makes the beer at the Bräustübl special starts inside the mountain. All beers served here are stored in one of the last natural rock cellars. Cold downdraughts enter the Barmstein rocks through cracks at the top and come out again at cellar level. This keeps the temperature below 10 °C all year round, without any refrigeration unit. A chronicle from the 17th century already reports that the cellar was "so cold that a fresh drink goes straight to your teeth". Read more in our article on the wind pipe phenomenon.
On tap
- Moasterbräu (original gravity 12.1°, 4.9 % ABV): brewed by brewmasters from Kaltenhausen, fresh on tap and also in bottles to take away. A cellar pilsner with a fresh, hoppy character.
- Kaiser Hofquell (11.7°, 4.6 % ABV): a Zwickl with a fine hop note.
- Kaiser Ruperti (12.4°, 5.2 % ABV): caramel and honey on the nose, full-bodied, with a subtle hop bitterness.
- Kaiser Märzen (11.6°, 5.0 % ABV): pale, brilliant, harmonious and slender.
- Bernstein (12.1°, 4.1 % ABV): light yet dense, with a spicy note, lively and refreshing.
Bottled specialities
- Kaiser Bergquell (12.1°, 4.9 % ABV): bottom-fermented and golden, with refreshing summery herbal aromas.
- Kaiser Salzquell (11.6°, 4.6 % ABV): pale and naturally cloudy, with a subtle hint of salt, a nod to Hallein's salt history.
- Kaiser Winterquell (16.3°, 7.2 % ABV): fine malt and honey notes, light-footed hop bitterness, a strong beer for the cold season.
- Kaiser Doppelmalz (12.8°, 4.7 % ABV): malty, with a slender structure and a reddish-brown colour.
Depending on the season, editions such as Herbstquell complete the range. If you prefer it alcohol-free, try the hop lemonade Hops in lemon and passion fruit, with 0.0 % alcohol.
A short beer glossary
What is original gravity? Original gravity (Stammwürze) indicates how much dissolved matter, mainly malt sugar, the wort contains before fermentation. It is measured in degrees Plato. The higher the original gravity, the stronger and usually more alcoholic the beer, as with Winterquell at 16.3°.
What is a Zwickl? A Zwickl is an unfiltered, naturally cloudy beer. The name comes from the "Zwickelhahn", the sampling tap brewers used to draw beer straight from the lagering tank.
What is a Märzen? Märzen is the most popular beer in Austria: pale, mild and balanced. It was originally brewed in March with a little more original gravity so that it would keep through the summer.
What is a cellar pilsner? A pilsner is more strongly hopped than a Märzen and therefore tastes drier and fresher. Moasterbräu brings this character straight from the tap into your glass.
Enjoying beer properly
Freshly tapped beer tastes best when it is cool but not ice-cold. Beer that is too cold loses aroma, beer that is too warm tastes flat. The natural cellar cooling below 10 °C is right in the range where pale beers such as Märzen and pilsner develop their flavour. A firm, fine-pored head keeps the carbonation in the beer and protects it from going flat, which is why a freshly and carefully tapped glass makes a difference.
Which beer goes with which dish?
The full-bodied Ruperti with its caramel notes pairs well with our Bräustübl goulash of local beef. With the Wiener schnitzel we recommend a slender Märzen that does not overpower the breadcrumb coating. The Kaltenhausen cold-cuts platter calls for a fresh, hoppy Moasterbräu, and white sausage with pretzel goes well with a lively Bernstein. With sweet desserts such as apple strudel, the malty Winterquell is a good winter choice. Our service team will be happy to advise you, and for groups there is a dedicated beer tasting menu.
